Pan Roasted Grouper ~ Makes 8 Servings

 ½      teaspoon                     salt

½      teaspoon                     fresh ground black pepper

8       each                             grouper fillets                           4 ounces each

2       tablespoons               olive oil

6       tablespoons               butter                                              melted

2       tablespoons               fresh lemon juice             

¼      cup                               fresh chopped chives

 Season grouper with salt and black pepper.  Heat 2 tablespoons of melted butter in a large skillet.  Working in batches to avoid overcrowding; add remaining 2 tablespoons of olive oil as necessary.  Sear grouper then turn and cook about 3 minutes.  Place pan in 400 degree oven to finish.  Remove from oven; place on a platter and keep warm.  Transfer grouper to each warm dinner plate.   Serve immediately on a mound of mashed potatoes, pasta or your choice of rice.  Garnish with fresh chopped chives.
